Ingredients

RoastedButternut Squash

  • 1 additional big butternut squash, cut into 1-inch pieces
  • 2 tablespoon olive oil
  • salt + pepper, to taste

CaramelizedOnions

  • 2 tablespoon olive oil
  • 3 big onions, cut in half & & very finely sliced
  • salt + pepper, to taste

Flatbread

  • 1 ready pizza crust
  • 1/2 Caramelized Onions (above)
  • 1/2 cup Fontina or Italian mix cheese, shredded
  • 1/2 Roasted Butternut Squash (above)
  • 2 tsp olive oil
  • 2 tablespoon sage leaves, cut into ribbons
  • 2 tablespoon toasted walnuts, sliced ( optional)

Instructions

RoastedButternut Squash

  1. Preheat oven to 400 ° F.
  2. Divide squash onto 2 rimmed baking sheets; drizzle each sheet with 1 tablespoon of olive oil, spray with salt and pepper and toss to coat.
  3. Bake for 45–50 minutes or up until tender.
  4. Reserve half for penne dish.

CaramelizedOnions

  1. Heat oil in a big frying pan over low heat.
