Freezer-Friendly Greens & Tofu Scramble Wraps Recipe

Although these tofu scramble wraps are excellent for breakfast, they make a fast lunch or supper too! Make them beforehand and freeze them for later on.

  • PrepTime: 15 minutes
  • CookTime: 15 minutes
  • TotalTime: 30 minutes
  • Yield: 6 portions


  • 14 oz company tofu, pushed for a minimum of 30 minutes then collapsed
  • 1 tablespoon dietary yeast
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tablespoon olive oil
  • 1 little onion, sliced
  • 4 oz shiitake mushrooms, stems gotten rid of & & caps very finely sliced
  • 3 cups torn kale, spinach, or chard leaves, hard stems gotten rid of (I choose kale)
  • salt + pepper, to taste
  • 6 medium entire wheat tortillas


  1. Combine tofu, dietary yeast, turmeric, and garlic powder in a big bowl. Set aside.
  2. Heat olive oil in a big frying pan over medium heat. Add onion; cook 5– 6 minutes or till softened, stirring sometimes. Add mushrooms and cook 2 minutes more. Stir in greens and tofu. Continue to prepare, stirring typically, till greens have actually wilted, 2– 5 minutes.
  3. Divide greens and tofu onto each tortilla and fold like a burrito.
