sweet potatoes.

Ingredients

  • 1 little sweet potato, pierced with fork
  • 1 tablespoon olive oil
  • 1 big onion
  • 1 1/2 cups kale, sliced(************************ ).
  • 1 vegetarian chorizo sausage, fallen apart( optional)
  • salt & pepper, to taste
  • (*********************************** )1/2 cup black beans, prepared or canned( wash well if utilizing canned)

    (*********************************** )1/2 tsp smoked paprika

  • 4 entire wheat tortillas
  • salsa for serving

Instructions

  1. Preheat oven to 400 ° F.
